The Vegan Nigerian: Malt Jollof Rice

Let’s get experimental! Malt drinks are common throughout Nigeria, typically paired with savoury meals  equivalent to Jollof rice, moin moin and extra. Attend any Nigerian get together or massive gathering and malt is extremely prone to be served there.

Elements 

1/2 crimson onion, sliced into rounds 

4 tbsp oil 

1 crimson bell pepper 

2 medium tomatoes 

1 scotch bonnet 

1/2 cup water 

1 cup malt drink 

4 tightly packed cups parboiled (pre-cooked) rice 

1 tbsp dried thyme 

1 tbsp curry powder 

Salt to style 

Technique 

1. Slice the crimson onions into skinny rings and put aside. 

2. Mix pepper, tomatoes and scotch bonnet with half a cup water till easy. 

3. Warmth the oil in a pot, add the blended combination and malt drink. Add the thyme, curry and salt. Cook dinner over excessive warmth, partially coated, for 10 minutes till the sauce thickens barely. 

4. Add the rice, combine effectively and lay the sliced crimson onions on prime. Cowl and simmer over low warmth for 25 minutes. Combine effectively in the direction of the top of the cooking time to mix all of the elements.
